I have come to prefer game cookbooks by Mule Deer’s wife, Eileen Clarke. I have yet to find a recipe I don’t like and most are at the top of the list of favorites. All the books are heavy at the front end regarding the how’s and whys of the various meats, game care from shot to pan, and how the particular cut compliments the recipe and vice versa. There is more info to be had but I’ll suggest getting the books to better explain.–woodmaster81
